Roasted Rosemary Potatoes with Oregano–Chive Finishing Sprinkle
Ingredients (4 servings)

600g potatoes, cubed

3 tbsp olive oil
-
1 tsp freeze-dried rosemary
-
¾ tsp freeze-dried garlic (optional)
-
Salt & pepper
-
1 tsp freeze-dried oregano
-
1 tbsp freeze-dried chives
Instructions

Preheat oven to 215°C (420°F).

Toss potatoes with olive oil, salt, pepper, rosemary, and garlic.

Roast 35–40 minutes until golden and crisp.
-
As soon as they come out of the oven, sprinkle with oregano and chives.

Toss lightly so the herbs bloom with the heat of the potatoes.
-
Serve immediately.
