Roasted Rosemary Potatoes with Oregano–Chive Finishing Sprinkle

Ingredients (4 servings)

 

  • 600g potatoes, cubed

  • 3 tbsp olive oil

  • 1 tsp freeze-dried rosemary

  • ¾ tsp freeze-dried garlic (optional)

  • Salt & pepper

  • 1 tsp freeze-dried oregano

  • 1 tbsp freeze-dried chives

 


Instructions

 

  1. Preheat oven to 215°C (420°F).

  2. Toss potatoes with olive oil, salt, pepper, rosemary, and garlic.

  3. Roast 35–40 minutes until golden and crisp.

  4. As soon as they come out of the oven, sprinkle with oregano and chives.

  5. Toss lightly so the herbs bloom with the heat of the potatoes.

  6. Serve immediately.
